Los Yesares es un vino tinto elaborado por Bodega Cerrón en su proyecto Stratum Wines para producir vinos únicos. Tinto acogido a la Denominación de Origen Jumilla.
Este tinto con DO Jumilla se produce con uvas de la variedad Monastrell principalmente y un 5% de Moravia Agria y 1% de otras, procedentes de un viñedo llamado El Casuto del Agrio en el paraje Barranco del Pedernal en la población de Fuente Álamo (Albacete). Viña plantada en 1942, zona en umbría con un suelo de gravas calizas y abundante silex. Altitud de 920 a 940 metros sobre el nivel del mar, y cultivo ecológico y biodinámico.
El tinto Los Yesares de Cerrón se vinifica de manera tracional, fermentación espontánea en barricas usadas de 500 litros, maceración postfermentativa de 40 días con pieles.

The bright ruby 2020 Los Yesares was produced with the grapes from the paraje where they want to focus, Yesares/Las Pedreras, and here they use three plots of old ungrafted Monastrell and a small percentage of other grapes, 5% Moravia Agria and some 1% other varieties found interplanted in the vineyard, as it happens everywhere with the old vines. They like to pick the grapes at full ripeness but without being overripe, keeping the tension and freshness, so the red wines are usually between 14.5% and 15% alcohol but never feel alcoholic or ripe and keep a low pH (here 3.28) and very good acidity (6.5 grams). The soils are very rich in limestone and at a high altitude (870 meters here) and deliver wines with very good freshness. It's elegant, precise, clean and with seriousness and a certain austerity. The wine is very tasty and super balanced, juicy and beautifully textured, dry and precise. It fermented with some 30% full clusters in open-top 500-liter oak barrels and matured in barrel until bottling. 1,700 bottles were filled in February 2020. - Issue 260 End of April 2022, The Wine Advocate -
