Zárate Caiño Tinto es un vino tinto elaborado por Bodegas Zárate y acogido a la Denominación de Origen Rías Baixas de Galicia.
Se produce con uva de la variredad autóctona gallega Caiño, procedente de viñas de más de 60 años, emparradas y plantadas sobre suelos de xabre granítico.
El Caiño Tinto de Zárate se vinifica de manera tradicional, se pisan sin despalillar en un tino de roble abierto. Luego fermenta lentamente durante 4 semanas. Ha reposado 8 meses en barrica de roble francés de tercer año donde realiza también la maloláctica.
Solamente se elaboran entorno a 1.250 botellas por cosecha.

The 2019 Caíño from Zarate was produced with grapes from individual ancient Caíño vines planted on granite soils in different ungrafted vineyards owned by them in the Salnés Valley. The wine, which is only 11% alcohol, has a medium body with notable acidity, 6.1 grams. It fermented with some 30% full clusters in open-top oak vats, with foot treading, and it aged (including malolactic) in used barriques for nine months. All the reds from Zarate have some rusticity with earthy notes. This has the aromatic profile of Caíño, with notes of rose petals, black peppercorns and tar, with a creamy texture and vibrant acidity with very tasty, pungent flavors. There are more tannins here, and the wine should develop nicely in bottle. In fact, in 2020 they saw that the wine needed more time in barrel to polish the edges. 1,313 bottles were filled in August 2020.
