Valautín Albillo Real es un vino blanco con barrica acogido a la Denominación de Vinos de Madrid y elaborado por Bodega Ca' di Mat.
Se produce con uvas de la variedad Albillo Real, que provienen de viñedos localizados en el pueblo de San Martín de Valdeiglesias (Madrid). Viñas viejas plantadas sobre suelos graníticos, con diferentes orientaciones y altitudes (entre 650 y 750 metros). Cultivo en vaso, secano y tradicional. Vendimiado a mano en cajas, con selección del fruto en viña y bodega.
Ca' di Mat elabora este Valautín Blanco con prensado directo, es decir, uva entera sin despalillar, fermentación espontánea con levaduras autóctonas. Posterior crianza en barricas de roble francés durante 12 meses sin batonage.

The village white 2021 Valautín Albillo from San Martín de Valdeiglesias was produced with grapes from different vineyards, mostly old ones on granite soils. The bunches were pressed directly, and 50% of the juice fermented in 300- and 500-liter barrels and the rest in stainless steel. The wine matured with lees (without stirring them) in the fermentation vessels for 12 months. In this cooler year, the wine reached 14.4% alcohol. It's juicy and fresh, with tasty flavors, lightness, freshness and balance in a year when they got good yields (and have more vineyards for this wine). It's clean and deep, with a soft texture, focused flavors and a dry finish. 6,800 bottles were filled in September 2022. - End of May 2023, The Wine Advocate

The village white 2019 Valautín Albillo from San Martín de Valdeiglesias comes from a number of vineyards, most of them old and on granite soils, from a very dry and warm vintage when they managed to contain the alcohol to 13.5%. The full clusters were pressed, and the juice fermented in used 300- and 500-liter oak barrels with indigenous yeasts and matured in the fermentation vessels for 12 months without racking or bâtonnage. This is a floral and fresh white with some spicy and herbal notes, expressive and a little wild. This is elegant and nuanced, fresher than the majority of Albillo Real, vibrant and complex, very young and with the complexity of the potpourri of vineyards used. 3,200 bottles were filled in July 2021. - November 2021 Week 2, The Wine Advocate -
