La variedad de uva empleada es la Verdejo procedente de la viña El Chivitero localizada en el municipio de La Seca (Valladolid); plantada en 1981 sobre suelos de canto rodado en superficie y viticultura ecológica.
Vendimia manual, prensa directa sin despalillar y fermentación espontánea en barricas de roble francés usadas durante 45 días. Posterior crianza con las lías durante 12 meses.

2022 / 94 puntos We tasted two vintages from a plot planted in 1981, the oldest of which was the 2022 Majuelo del Chiviritero, from what they consider one of the best vintages ever. Despite the heat and drought of the year, the wines have lower alcohol, 13% here, and the profile is fresher. They followed their normal modus operandi here, fermentation of the juice with all the solids, in used oak barrels and with indigenous yeasts. The élevage was 11 months in French oak barrels and seven months in stainless steel. The nose is a little austere and shy, and it's insinuating and subtle. This has weight but feels light and is very chalky and sapid. The wines, except for the Cantayano, are never clarified, but this became bight and clear with time while the 2023 remained cloudy. 13,000 bottles produced.
