Tuca Negra es un vino tinto de Cuevas de Arom (Frontonio y San Alejandro) y acogido a la Denominación de Origen Calatayud (Zaragoza, Aragón).
Monovarietal de Garnacha de viñas viejas (más de 80 años), plantadas en vaso y secano, sobre suelos de pizarra y cuarcita, a 850 metros de altitud sobre el nivel del mar. Vendimia manual, y selección del fruto en campo y bodega.
Cuevas de Arom Tuca Negra es encubado durante 80 días con bazuqueo manual y pisado a pie. 100% de uvas con raspón y fermentación con levaduras autóctonas. Crianza de 14 meses en depósitos cerámicos de 250 litros.

The 2020 Tuca Negra, which means "red peak" in the Aragón dialect, was produced with Garnacha from a very old and stony vineyard on slate and quartzite soils, different from the previous vintages. It fermented with indigenous yeasts and full clusters that were foot trodden and had a very long maceration of 80 days, then it matured in a Clayver ceramic sphere. The 2017 was a completely different wine, as it matured in barrel and was significantly oaky. This is different from previous vintages and also from the rest of the range because it has a reductive and flinty nose, a little smoky with a core of violets and wild herbs. It's silky and has very refined tannins. Wild and elegant at the same time. Only 300 bottles were filled in September 2021.
