El vino permanece en contacto con sus lías durante un año en acero inox y posteriormente embotella directamente, donde realiza una crianza de año. Solamente se han elaborado 1.300 botellas.

The eight vintage of this organic white, the 2013 Sábrego Ecológico is pure head pruned, old vine Dona Blanca from sandy soils of granitic origin, locally known as 'sábrego'. Part of the full clusters were used at the start of the fermentation, then pressed and kept with the fine lees for one year before bottling. This is relatively more aromatic and open - a little showier than the white Alanda, but not much. The year produced very tasty grapes, and there are deep mineral aromas (even chalky) and textures, fresh and tight knitted, with pungent flavors with great freshness and balance. I like this wine very much, it has the strict minerality and mouthfeel of the granite soils, but at the same time it has good volume and fills your mouth. Do wines show minerality? You bet! This is a certified organic white (all the vineyards are certified since 2005), but all of them could be; but to have the winery certified you need to release at least one organic label. 1,300 bottles filled in October 2015.
