The NV Grand Cru Extra Brut V.P. (V.P. stands for Vieillissement Prolongé) is an assemblage of three vintages: one-third from 2009, one-third from 2008 and one-third from 2007. It's a blend of 70% Pinot Noir from Ambonnay, Bouzy and Verzenay and 30% Chardonnay from Ambonnay. Disgorged in July 2017, after 84 months on the lees, this intensely yellow colored wine shows an intense and complex bouquet with deep and rich yet precise fruit and some mineral notes. This is a concentrated, minerally fresh and complex cuvée that has a firm structure and a refreshing finish. It is the same blend as the Tradition, but the combination of three vintages and two and a half more years of bottle aging adds complexity and structure. This is salty and terribly fresh, not because of acidity but because of minerality, not a pinch of fat here, just minerals and structure.
